Argentine chef Gonzalo Nogueira has crafted an exclusive menu prepared almost entirely over wood fire, bringing bold, smoky, and charred flavors to life in every dish. His approach blends ancestral grilling techniques with contemporary flair and artisanal care.
The bar completes the concept with signature cocktails inspired by the name Raíces, celebrating the essence of the earth and the fire that defines this one-of-a-kind restaurant.
Originally from Monterrey, Nuevo León, Israel Monsiváis has built a career spanning over two decades in gastronomy, blending culinary passion with strong business expertise. Trained as a chef, with a degree in Business Administration and a Master’s in Business, he has successfully integrated creativity and strategy, establishing himself as a leader in innovative culinary projects.
He began his journey in the kitchen, developing both discipline and sensitivity, before expanding into leadership roles as General Director for various companies. This experience gave him a unique perspective that merges business rigor with culinary artistry, allowing him to design projects that balance strategy with passion.
In Mexico, he contributed to luxury projects such as the opening of Garza Blanca Resort in Puerto Vallarta and founded concepts like El Ricas Coctelería, bringing seafood closer to the public in a modern, accessible format. In the United States, he collaborated with brands such as PizzaRev and IHOP, adapting international models to the Mexican market.
Today, he is co-owner of Cantina Primordial and El Rincón de Majahuitas, spaces that embody his vision of creating authentic, memorable experiences. Named Rising Chef of the Year 2025, Monsiváis stands as one of the most promising voices in northeastern Mexico’s gastronomy, committed to blending tradition, innovation, and strategy for future generations.
Born in Buenos Aires and raised amid the rugged beauty of Patagonia, Chef Gonzalo Nogueira is the visionary behind Raíces. His culinary journey began in childhood, cooking alongside his grandmother and mother, who instilled in him a love for homemade food and the emotions it can awaken. Although he initially studied international business, the call of the kitchen soon pulled him back to his roots—first professionally in Argentina, and later across borders.
His self-taught path eventually brought him to Mexico, starting in Monterrey, where he was captivated by the bold flavors of street food and the diversity of regional cuisines. Later, he settled in Boca de Tomatlán in Bahía de Banderas, where, through his wife’s family traditions, he deepened his appreciation for Mexican cooking—particularly ancestral wood-fired techniques and the art of smoke as a transformative element.
With over twenty years of experience in boutique hotels and acclaimed restaurants throughout the region, Gonzalo fulfilled his dream of opening Raíces, a restaurant inspired by the traditions of Mexican mothers and grandmothers, blended with his Argentine culinary heritage, to create an authentic and heartfelt dining experience.
Set against the breathtaking backdrops of Puerto Vallarta, Riviera Nayarit, and Tepic, with perfect weather and spectacular views, the Gourmet Festival is more than an event: it is a celebration of culture, flavor, and community since 1995.
