Fabiola Meraz

Originally from the Huasteca Potosina, Chef Fabiola Meraz began her professional career as a communications specialist, a role she held for several years before pursuing her true passion: cooking. She trained at the Culinary Institute of America, where she earned her certificate in Culinary Arts, and also studied at Anáhuac University in Mexico City.

Fabiola has worked in various restaurants in Mexico City, and it was in San Luis Potosí where she launched her career as a chef-entrepreneur, opening the restaurants Biodeguita and Sibarita. Thanks to her success, she became a culinary ambassador for her state.

In 2020, Fabiola arrived in Puerto Vallarta, where she fell in love with the soul and people of the port. There, she became co-owner and executive chef of the restaurants Los Toneles and MUXA, Cocina del Alma. Her experience includes cooking alongside Michelin-starred chefs like Carlos Gaytán and Top Chefs like Zahie Téllez. She has also participated in important culinary festivals, representing women chefs in the “Sabores de Vallarta” promotion in Mexico City.

Recently, in 2023, she was a guest chef at the Taste of Vail Festival in Colorado, as well as at Chef Thierry Blouet’s International Gourmet Festival. Fabiola is also the founder of the initiative “Ellas se Juntan,” which aims to give greater recognition to women chefs, mixologists, and sommeliers in the region, while also helping vulnerable groups through charity events.

She has since delegated this work to focus on her current project, “A Mar y Sierra,” where she shares her culinary story through dishes that reflect her roots and connection with Puerto Vallarta.

Lupita Vidal

Lupita Vidal is a distinguished chef from Tabasco, celebrated for her advocacy of both traditional and contemporary cuisine from her region. With over a decade of culinary experience, she authored the acclaimed book Agua y Humo – Cocinas de Tabasco, which garnered a nomination at the 2024 Gourmand World Cookbook Awards.

As the owner of La Cevichería Tabasco and Salón Caimito, her restaurant La Cevichería has been recognized as one of the top 250 restaurants in the country for 2024.

In 2020, she launched a line of artisanal sauces and served as a judge on the hit show MasterChef. In 2023, she was selected by the U.S. Embassy as a Mexican leader for the IVLP program, where she traveled to various states in the U.S. to forge connections with American leaders.

Lupita’s passion for the authentic flavors of the tropics, combined with her dedication to the culinary heritage of Tabasco, firmly establishes her as a pivotal figure in Mexican gastronomy.
