Chef Federico López, born in Mexico City, is a leading figure in contemporary Mexican cuisine. With over 36years of experience, he graduated from the Culinary Institute of America in 1992 and trained in prestigious Michelin-starred restaurants. In 1996, he co-founded “El Semillero” Culinary Center with Banquetes Ambrosía, a cradle for top culinary talent in Mexico.
Named one of the 20 most influential chefs in Mexico (2009), he has earned numerous accolades, including the San Pascual Bailón Award (2013), the Ricardo Muñoz Zurita Medal (2016), and “Chef of the Year” by Vatel Club Mexico (2017), in addition to being named Dean of Mexican Cuisine.
He currently leads Taller Gourmet Catering, Zama Beach Club, and H19 Restaurant. Since 2016, he has served as Canadian Beef ambassador for Mexico and Latin America, and is the founder of “Pesca con Futuro,” a COMEPESCA initiative. He has represented Mexico at international events such as EPCOT and Emirates Palace. At the 30th Festival Gourmet Internacional, his participation promises an exceptional culinary journey that celebrates the authenticity and creativity of Mexican gastronomy.
Born in 1987 in Mexico City and raised in Hidalgo, Ricardo Alvarez discovered his passion for cooking at an early age while helping his mother in the kitchen. Although his first interest was music, he eventually found in gastronomy a powerful way to express creativity, history, and emotions.
In 2011, he graduated in Gastronomy from Universidad Siglo XXI and began his career in several restaurants, gaining the foundations of his culinary identity. In 2014, he moved to Puerto Vallarta, where he joined Café des Artistes as Sous Chef, marking the beginning of his professional growth. His desire to expand his knowledge led him to San Sebastián, Spain, where he worked at NiNeu under the guidance of acclaimed chef Andoni Luis Aduriz, enriching his perspective on contemporary cuisine.
Upon returning to Mexico, he joined the team at Koli in Monterrey before coming back to Puerto Vallarta, where he took on the challenge of leading the opening of Codex at Conrad Punta de Mita. His leadership and creative vision positioned the restaurant among Mexico’s top 250 for two consecutive years. Today, Ricardo continues to refine a culinary style that blends technique, cultural roots, and the art of storytelling through food.
