Chef Tonatiuh Cuevas is currently sharing his passion for gastronomy through his new project, “Cosecha Farm to Table”, a culinary proposal centered on the ingredient, its origin, and the richness of Nayarit’s land. His vision is to create a unique space where tradition and modern trends meet, embracing nature, sustainability, and the benefits of wholesome food.
His talent emerged at an early age, encouraged by his mother to pursue culinary school. Tonatiuh went on to build his expertise working with prestigious restaurants and global hospitality brands in both the United States and Mexico. These experiences inspired him to reconnect with his Mexican culinary roots, blending traditional flavors with global influences—a philosophy that permeates the menu at Cosecha Farm to Table.
Continuously highlighting the generosity of local and seasonal produce from Nayarit, Chef Tonatiuh offers his guests a homestyle dining experience rooted in simplicity and purity. His relaxed yet refined personal style is expressed through vibrant, creative dishes crafted with care for sourcing and impact on local producers. With fresh garden vegetables as a daily staple, his cuisine reflects authenticity and respect for the land. In his own words, his culinary philosophy is “an experience that enriches and nourishes in every sense.”
Chef José Alfredo Bazán Bello, originally from Mexico City, brings over 21 years of experience and a deep passion for bold flavors and ancestral cooking. Influenced by the cuisines of Oaxaca, Veracruz, and Yucatán, Chef Bazán affectionately known as “Bazán”. Joins the International Gourmet Festival for the third time, now as host chef at Bocados Steak House.
He is a true lover of open-fire cooking, underground roasts or pib (a traditional Mayan technique), and slow-cooked dishes that build complex, explosive flavors. His cuisine honors tradition while embracing modern creativity.
Throughout his career, Chef Bazán has worked in prestigious kitchens across Mexico and Spain and has had the privilege of cooking for the King and Queen of Spain, former Mexican presidents, and renowned celebrities. Now at Bocados Steak House, he brings his mastery of smoke, fire, and heritage to a refined and contemporary dining experience that elevates every bite.
Set against the breathtaking backdrops of Puerto Vallarta, Riviera Nayarit, and Tepic, with perfect weather and spectacular views, the Gourmet Festival is more than an event: it is a celebration of culture, flavor, and community since 1995.
