Chef José Alfredo Bazan Bello
Originally from Mexico City but strongly influenced by the flavors of Oaxacan, Veracruz and Yucatecan cuisine, Chef Bazán (as his friends call him) will participate for the 3rd time in the IGF but now as the host chef of Bocados Restaurant. Chef Bazán is a lover of charcoal cooking, underground roasts or pib (a Maya technique) and slow cooking, he brings to each dish an intense and explosive flavor at the same time.
With more than 21 years of experience in the kitchens of both Mexico and Spain in different hotels and restaurants, he has had the fortune of cooking for great personalities such as the King and Queen of Spain, former presidents of Mexico and renowned personalities of the artistic world.

Chef Oscar Garfias
Recognized for a 15-year career marked by exceptional leadership skills, Chef Oscar Garfias has grown within the top hotel and restaurant chains in the city and throughout Mexico. He has progressed from line cook to chef de partie, then to banquet chef, sous chef, and finally, he has recently been appointed as Executive Chef at the Villas del Palmar chain in Hotel La Estancia. He has worked in renowned restaurants such as Café des Artistes, where he held a line chef position, as well as Tuna Blanca in the same chain.
Chef Oscar Garfias has had the fortune of participating in internationally recognized events and has collaborated with culinary greats such as Chef Guy Santoro (President of the Vatel Club Mexico) and Chef José Manuel Baños (chef of PITIONA in Oaxaca), among others. Throughout his career, he has also had the opportunity to work in hotels outside the port area, such as NH LUXURY in Puerto Madero, Cancún. Undoubtedly, he has carved a path in haute cuisine thanks to his humility and positive energy.
