Erick Bautista Chacón (1993), originally from Ixtepec, Oaxaca, is deeply passionate about Mexican cuisine as well as teamwork and collaboration. He is currently the executive chef at NOL in Mérida, Yucatán, where he curates a creative culinary discourse rooted in local ingredients transformed through both Mesoamerican and contemporary techniques.
He trained at the Universidad de la Vera-Cruz in Zacatecas and under Chef Miguel Ángel Quezada. Erick’s career includes working in renowned restaurants such as Biko (Mexico City), Ixi’im, and Huniik (Yucatán). He also trained in prestigious international kitchens like Martín Berasategui (Spain, three Michelin stars) and Central (Lima, Peru), while also gaining experience in Italy at Osteria de l’Acquarol (one Michelin star) and Areadocks, in addition to several projects across Mexico, from Oaxaca to Valle de Guadalupe.
In 2022, he won the Latin America and Caribbean regional final of the S.Pellegrino Young Chef Academy and went on to be a world finalist in Milan in 2023. That same year, Forbes named him among the 100 Most Creative Mexicans. At NOL, his proposal highlights ingredients such as corn, beans, cacao, quelites, recados, and insects, weaving plant-based, animal, and ancestral traditions with modern techniques and absolute respect for the product.
Chef Hector Leyva, originally from Oaxaca and trained at the Culinary Institute of Mexico, has built a distinguished career by elevating Mexican cuisine through a contemporary lens. His culinary journey includes world-class kitchens such as Four Seasons Punta Mita and Maui, and The World Residences at Sea, where he refined his technique and developed a unique vision rooted in creativity and authenticity.
In 2018, he brought this vision to life by opening Hector’s Kitchen in Punta Mita. A restaurant that pays tribute to the rich flavors of Mexico’s land and sea. His cuisine highlights fresh Pacific ingredients and high-quality local products, merging tradition with innovation.
Leyva is known for his refined yet honest approach to traditional Mexican cooking. With Hector’s Kitchen, he has become a culinary reference in Riviera Nayarit, blending heritage, precision, and creative flair.
