Oscar Arturo Galván Ibarra, originally from Guadalajara, Jalisco and now based in Puerto Vallarta, discovered his passion for gastronomy at a young age. With over a decade of professional experience, he has worked alongside renowned Japanese chefs such as Chiaki Yokomori and Shiney Tawada, from whom he learned authentic Japanese cooking techniques, discipline, and secrets that have shaped his culinary vision. His style reflects dedication, precision, and a deep respect for ingredients.
Today, Oscar leads the culinary team at Torio, an innovative concept that has become a benchmark of quality and creativity in Puerto Vallarta. Torio is defined as a Handroll Bar, often described as a “Japanese taquería” for its casual dynamism, yet executed with remarkable sophistication and attention to detail.
Here, handrolls take center stage: each one prepared to order with top-quality ingredients, many imported directly from Japan. Ernesto Olvera Flores, originally from Mexico City, is a passionate chef specializing in Japanese cuisine with more than 30 years of professional experience. His culinary expertise spans both traditional and contemporary dishes, always emphasizing the artistic presentation and the use of the freshest, highest-quality ingredients. With a style that blends tradition and innovation, Ernesto has mastered the art of creating proposals that reflect authenticity, elegance, and creativity.
Throughout his career, he has honed the skills and techniques that define Japanese gastronomy, standing out for his ability to transform each dish into a sensory and aesthetic experience. His philosophy highlights precision, respect for original flavors, and innovation in execution, positioning him as a distinguished figure in his field.
He currently serves as chef patron at Hiroshi, the renowned restaurant at Hotel Mousai in Puerto Vallarta, Jalisco. In this role, he leads his kitchen team with excellence while delivering authentic, innovative, and high-quality dining experiences.
