With over 10 years of experience in event gastronomy and catering, Julio Guardado has become a culinary reference in Baja California, particularly in Valle de Guadalupe, Ensenada, and Tijuana. He is the founder of Rey Paellas, a project specializing in Spanish cuisine, molecular gastronomy, seafood, meats, and grills, through which he has brought his passion to private, corporate, and large-scale events.
His career includes the creation of personalized menus and the coordination of kitchen and service teams, standing out for his innovation in Spanish and molecular cuisine, as well as his dedication to healthy gastronomy.
Among his most notable achievements are being a Mexican finalist at the International World Paella Day Competition 2023, participation in the Culinary Academy of France 2023, active membership in Club Vatel México 2022, and participant in the World Federation of Chefs 2021. He was also featured in Cocineros de México 2020 and holds a rice certification from Valencia, Spain (2025).
Today, Chef Julio Guardado continues to promote Spanish gastronomy in Mexico, sharing his talent, creativity, and passion for paella with a unique style that has earned him national and international recognition.
Originally from Puebla, Mexico, Rogelio Dominguez began his culinary journey immersed in open-fire cooking. His talent and creativity led him to work with renowned international chefs, including a key role as a line cook at the acclaimed Central restaurant in Lima, Peru, under Virgilio Martínez and Pía León.
His career flourished in the United States, where he explored innovative culinary techniques and embraced American gastronomic culture. Returning to Puebla, he became Research and Development Chef at Barroco, gaining acclaim for his “Salvador Dalí y la Divina Comedia” tasting menu.
In 2018, Rogelio won first place at the IXTAChef international culinary competition, cementing his status as a creative force in Mexican cuisine. In 2019, he co-founded Montaje. Cocina de Regiones, celebrating Puebla’s culinary heritage through native ingredients and ancestral techniques.
Today, he leads the culinary evolution at Villa Premiere, combining international influences with the art of fire and an unwavering commitment to authenticity. His vision offers guests a refined gastronomic experience where the cultural depth of Puebla meets the coastal elegance of Puerto Vallarta.
