Marlen Cota

Marlen Cota, born in La Paz, Baja California Sur, discovered her passion for pastry from an early age, making it the foundation of her professional path. She studied in Mazatlán and later moved to southern Mexico, where she participated in several culinary projects that allowed her to refine her technique and develop a creative vision focused on innovation and precision in the art of desserts.

Throughout her career, she has stood out for her ability to combine technique, aesthetics, and flavor in every creation. Her approach reinterprets classic pastry with a contemporary perspective, emphasizing the use of premium ingredients and meticulous presentation.

Professionally, she has held key positions such as supervisor and pastry chef at Hotel Volga, head pastry chef at Grupo Edo Kobayashi, and currently serves as pastry chef at Tiffany & Co.’s The Blue Box Café in Mexico City, the brand’s first location in Latin America.

Beyond her work in the kitchen, she collaborates with leading baking brands, teaching specialized workshops and courses to share her expertise with emerging pastry chefs and to strengthen professional pastry education in Mexico. Her work reflects a perfect balance between discipline, creativity, and passion for the sweet side of gastronomy.

Germán Estrada

Germán Estrada, originally from Puerto Vallarta, Jalisco, discovered his passion for gastronomy at the age of 15, when he began his career working in hotel chains such as Hilton. That early experience ignited his dedication to the culinary world, leading him to refine his skills within prestigious hospitality brands like RIU and Hard Rock, as well as in renowned restaurants such as Sonora Grill, where he strengthened his expertise in contemporary cuisine and hospitality.

Now at just 27 years old, Germán has developed a culinary style that blends creativity, technique, and sensitivity, delivering experiences that embody both innovation and authenticity. He currently serves as chef at Le Bistro Restaurant, where he combines his professional training with his own vision to create dishes that reflect the richness of international gastronomy.

His cooking celebrates global influences while maintaining a personal touch that positions him among the new generation of talented chefs from Puerto Vallarta.
