Originally from Tolima, Colombia, this chef has built a career spanning more than 15 years in gastronomy. He trained as a Professional Culinary Technician at SENA (National Learning Service) and has since focused on highlighting local products and promoting sustainable practices. He is co-founder of Celele Restaurant in Cartagena de Indias and of Proyecto Caribe Lab, a research initiative that celebrates the rich culinary culture and diversity of the Colombian Caribbean.
In 2020, he was awarded the Social Responsibility Prize in the Latin American semifinal of the San Pellegrino Young Chef competition, reinforcing his commitment to sustainable gastronomy. During his eight years in Cartagena, he championed local cuisine and represented Colombia on international stages including Panama, Peru, Italy, and Madrid Fusión, one of the world’s most prestigious culinary congresses.
Since 2022, he has been based in Mexico City, where he leads Palapa Cantina Caribeña. This project blends Mexican cantina culture with flavors from across the Caribbean: Cuba, Jamaica, the Dominican Republic, Trinidad and Tobago, Colombia, and the Mexican Caribbean. In just three years, Palapa has become a hospitality benchmark in the capital, offering diners an escape from the urban jungle and transporting them to the Caribbean through food, atmosphere, and culture.
Valentina Jaimes, born in Bogotá, Colombia, is a chef with a strong passion for gastronomy and a well-rounded academic and professional background. She holds a degree in Gastronomy from the Universidad Tecnológica de Nayarit and has accumulated over 8 years of experience working in restaurants across both Colombia and Mexico.
In 2019, she won first place in the National Cooking and Pastry Championship of Colombia, a milestone that marked her career and strengthened her vision of cuisine as a field of innovation and discipline. Beyond her culinary studies, Valentina has pursued complementary training in accounting, administration, marketing, and leadership through the Aspire Program, taught by faculty from Harvard Business School.
Her professional path includes serving as a culinary instructor at ICSEF University in Colombia between 2022 and 2023, where she shared her expertise with aspiring chefs. Upon returning to Mexico, she joined Loma 42 Bahía as Chef, where she continues to refine her style that blends technique, creativity, and a commitment to excellence.
With a steadily rising career, Valentina Jaimes stands out as one of the most promising female voices in Latin American gastronomy, bringing passion and innovation to every dish she creates.
