Yair Rodriguez
Born in Mexico City in 1990, Yair has been immersed in the culinary arts since 2018. He began his career as a kitchen assistant at Hotel Presidente Intercontinental, where he quickly advanced to the role of hot kitchen supervisor in the banquet area. Throughout his career, he has worked in various kitchen sectors, including cold, hot, breakfast, dinner, and events, and has complemented his training with specialized workshops and diplomas.
His experience includes notable roles such as Chef de Partie at renowned restaurants like Gaucho Grill in Polanco, Au Pied de Cochon at Hotel Presidente, Diana at the St. Regis Hotel, and Rustic Pan, where he specialized in rustic bakery. He has had the privilege of working with renowned masters such as Chef Guy Santoro and the Rivera Ríos brothers from Koly.
He participated in the opening of the Sofitel CDMX Hotel at the Bajel restaurant and the opening of Noi at Mousai in Puerto Vallarta. He has also held supervisory positions at the Hilton and Hyatt Ziva hotels in Vallarta. Currently, he is the Chef at the Fine Dining Beach Club Xalli Club, where he continues to develop his passion for cooking.

Erick Bautista Chacón
Born in 1993, Erick Bautista Chacón, is a talented Mexican chef currently serving as Executive Chef at Nol in Mérida, Yucatán. With deep roots in Oaxaca, Erick’s culinary approach blends traditional Mesoamerican techniques with modern innovations, always emphasizing the use of local ingredients. He began his formal training at the Universidad de la Vera-Cruz in Zacatecas and refined his skills under the mentorship of chef Miguel Ángel Quezada. His career has taken him to some of Mexico’s finest kitchens, including Biko in Mexico City, as well as Ixi’im and Huniik in Yucatán. He has also gained international experience at renowned establishments such as Martín Berasategui in Spain and CENTRAL in Lima, Peru.
Erick’s career has been marked by numerous prestigious accolades. In 2022, he won the San Pellegrino Young Chef Academy competition in Bogotá, earning recognition as one of the most promising chefs in Latin America. That same year, Forbes named him one of the 100 most creative Mexicans in the world. In 2023, his exceptional skills and creativity were further acknowledged when he was awarded the title of Best Young Chef in Latin America, solidifying his reputation as one of the top rising stars in global gastronomy.
In addition to his success in Mexico, Erick has showcased his talents internationally, cooking at acclaimed restaurants like Osteria de l’Acquarol in Italy, which holds a Michelin star, and Areadocks in Brescia. In Mexico, he has made a lasting impact at establishments such as Macuitl Molino in Puebla and Marea in Mexico City, where he worked alongside his mentor Lula Martín Del Campo. Erick’s passion for Oaxacan cuisine, his relentless drive for innovation, and his collaborative spirit have firmly established him as a key figure in contemporary Mexican gastronomy.
