Located on popular Playa Los Muertos, the classic El Dorado Restaurant recently opened its doors once again as part of Grupo La Palapa to pay homage to a bygone era of Puerto Vallarta’s golden age. The restaurant highlights a menu of fine seafood with the freshest ingredients of the bay and surrounding tropical region. On the menu you can find items such as local lobster, oysters, crab cakes, local red snapper, and more. El Dorado has an elegant yet casual and beachy ambience with natural wood, white and blue colors and beachfront views. Live music can be enjoyed every night and is open daily for breakfast, lunch and dinner, as well as its famous beach club.

As an experienced Chef, he has made significant contributions to the gourmet world in Mexico, the United States, and Argentina. He also excels in consultancy and teaching. Recognized as an Ambassador of Argentine, Latin, and European flavors, his illustrious career includes important contributions to prestigious establishments such as Alvear Palace, Sofitel, Barceló hotels, Monarch restaurants, and Grupo Carbón México.

Randy Siles 

Randy Siles is an internationally renowned Costa Rican chef, known for his focus on preserving and revitalizing the ingredients and ancestral techniques of Costa Rican cuisine.

Siles is the co-founder of Autoktono, the first platform in Costa Rica dedicated to transforming local food systems through sustainable and healthy gastronomy, which includes an alliance with the Ministry of Justice and Peace of Costa Rica, offering sustainable gastronomy courses to young people deprived of liberty. Additionally, Siles is the founder of Artesanos de la Gastronomía, a non-profit organization that identifies, trains, and facilitates the employment of talented young people with limited economic resources in the gastronomy and hospitality sector.

In 2024, Siles was named Ambassador of the País ESENTIAL Costa Rica brand, a recognition of his career in promoting Costa Rican cuisine on the international stage. That same year, he was invited as a featured chef to the international Futures Menu 2024 forum at the Unilever Foods Innovation Center in the Netherlands.

Among his numerous awards, his induction into the International Club Les Toques Blanches in France stands out, making him the first Latin American chef to receive this prestigious recognition. He has also been named Costa Rica’s Chef Ambassador by the Cook & Chef Institute and has been recognized among the “50 best chefs in the world” by the Miami Food and Wine Festival, sharing the stage with culinary icons like Massimo Bottura and Masaharu Morimoto.
