Israel Plascencia

Originally from Guadalajara, chef Israel Plascencia began his career in 2006 in the kitchen of Dainzú, an Oaxacan restaurant with more than 35 years of history in that city. Upon completing his degree in Gastronomy at the Universidad de La Ciénega, he worked at Lula Bistro with chef Darren Walsh, as well as at Cortéz Cocina Authentic with Nico Mejía and at Tintoretto Restaurant. He arrived in Puerto Vallarta in 2017, and, after having been with Grupo Vidanta’s Spanish restaurant Chiringuito and Thierry Blouet’s Tuna Blanca in Punta de Mita, he took the reins at Makal, where he has been working since the conception of the project.

A 28-year-old graduate of the Universidad del Valle de México with 10 years of experience in the gastronomic field, Karla highlights the beginnings of her career in hotels such as Belmond in Playa Maroma in Quintana Roo.Karla defines her style of cooking as a mixture of tradition and technique with the sole purpose of achieving the perfect balance of flavors, sensations and taste memories, for this she takes as a starting point a family idea,Mario is 30 years old and has 15 years of experience. The style of cooking that has defined Mario consists of a constant search for products and his experimentation with them in order to take them to the limit and apply the best process for them.
