Sebastian moved to Puerto Vallarta in 2015, falling in love with the city and its people. He joined Villa Premiere Boutique Hotel & Romantic Getaway in 2019; here, Chef Varona has created menus from the heart, with a novel proposal that focuses on using fresh, sustainable ingredients from the region; supporting local commerce, but, above all, respecting the flavors of each element.
For Chef Varona, each recipe is born from a great passion for combining different flavors within a dish; however, he finds
inspiration in every corner, in the environment in which he lives… every idea, every feeling, shapes him until he achieves a desirable result, to the eye, to the palate, to the heart and soul. He always considers the new trends and gastro-culinary movements; but for him, the most important thing will always be that each dish is an expression of love and joy.
He defines himself as an open-minded chef, without prejudice, always friendly and smiling at life.
Originally from Mexico City, he ventured into kitchens at a very young age, obtaining the title of chef at only 19 years old. He has academic and teaching experience in Europe. He is currently the Chef at Rufina Mezcalería, the owner of Vision Gourmet (gourmet advisory), and a specialist in food pairings, banquets, Mexican, Mediterranean and grill cuisine, as well as personalized services.
