Chef Rogelio Dominguez Vargas
Originally from Puebla, Mexico, Rogelio Dominguez started his culinary journey in the vibrant world of open-fire cooking in his hometown. His talent and creativity soon led him to collaborate with renowned chefs in international settings, including a significant role as a line cook in the prestigious restaurant “Central” in Lima, Peru, under the leadership of acclaimed chefs Virgilio Martinez and Pia Leon. His career further flourished in the United States, where he developed innovative culinary techniques, immersing himself in American gastronomic culture. Rogelio returned to Puebla to serve as the Research and Development Chef at the Barroco Restaurant, where his work was widely recognized, particularly the Tasting Menu “Salvador Dalí y la Divina Comedia”.
In 2018, Rogelio won first place in the International Mexica IXTAChef 2018 culinary competition, solidifying his reputation as an innovator in the kitchen. The following year, he co-founded “Montaje. Cocina de Regiones”, a concept that celebrates the richness of Pueblan gastronomy through indigenous ingredients and traditional techniques.
Currently, he is driving the evolution of the resort’s culinary offerings, focusing on an innovative approach that fuses international cuisine with the fundamentals of fire, all while maintaining his commitment to authenticity and excellence. His vision is to offer a unique gastronomic experience that blends Puebla’s cultural richness with Villa Premiere’s distinctive sophistication and style.

Chef Valeria Sanchez
As a graduate of Culinario Coronado (2010-2013), she embarked on her culinary journey in the Image Department before completing her internship at Restaurante Raíz (2012-2014). In 2015, she joined Restaurante Quintonil as a pastry chef, quickly rising to the role of head chef by 2016. Her tenure at Quintonil was marked by invaluable experiences alongside esteemed chefs such as Esben Holmboe Bang, Matt Orlando, Mauro Colagreco, René Redzepi, Vladimir Mukhin, Virgilio Martínez, Gaggan Anand, and Zaiyu Hasegawa.
One of her standout achievements was her participation in René Redzepi’s acclaimed pop-up, Noma Tulum, which further solidified her reputation in the culinary community. This experience not only showcased her skills but also provided her with a unique perspective on global gastronomy. After leaving Quintonil in 2018, she felt inspired to explore new personal projects, seeking to push the boundaries of her creativity and culinary expertise.
Throughout her journey in the culinary world, she has developed a robust skill set and deep knowledge, enabling her to collaborate with some of the industry’s finest talents. Her diverse experiences have shaped her culinary philosophy, and she continues to strive for innovation and excellence in every project she undertakes.
