Gaetano Fernandez Simonetti

Of Neapolitan origin, but raised in Lucca, a city in Italian Tuscany, Chef Gaetano Simonetti began his culinary career at the age of 20 in Spain.
In 2007 he arrived in Mexico and collaborated as chef in several restaurants in Punta. In 2009 he opened the Trattoria Boccon di vino located in the romantic zone of Puerto Vallarta and later La Tosca. For Gaetano it is very important to transmit the origin and traditions of his country preserving the original recipes and flavors, reproducing in an artisan way the most representative recipes of his land to offer his diners an authentic Italian experience in Puerto Vallarta.

Almost 23 years ago, Massimo Pampaloni left his homeland in Tuscany to embark on an exciting journey that would lead him to Mexico. A lover of Mexican culture and an art merchant in Italy, Massimo explored every corner of Mexico in search of bringing back to his native land a vibrant piece of Mexico. Accompanied by his wife, Elena, Massimo discovered not only works of art, but also the essence of the culture, the richness of gastronomy, the beauty of the land, and the freshness of Mexican products. It was then that they made the decision to stay and give life to “Ristorante Da Massimo,” an extension of their own home and family.
Ristorante Da Massimo invites you to enjoy authentic Italian cuisine in a cozy, colorful, and picturesque setting that transports us instantly to a corner of Tuscany. Its opening not only brought a new gastronomic option to Guadalajara but also elevated the city’s standards for “fine dining” establishments. It’s no coincidence that Massimo Pampaloni and his wife Elena were pioneers in using authentic Parmesan cheese in their recipes.
Each of the ingredients used in their traditional recipes is carefully selected and sourced from the highest quality providers. Some ingredients are even imported directly from Italy to ensure that each dish is a true representation of Italian tradition.
