Chef Alexis F. Valera

Alexis Valera, born in 1991 in Teziutlán, Puebla, began his career in gastronomy in renowned restaurants, one of which was the Maíz de Mar restaurant, under the direction of chef Enrique Olvera. In 2017, Valera had the opportunity to open a restaurant with authentic Mexican flavors at the Ritz-Carlton Hotel in Dubai. This achievement led him to compete in the San Pellegrino Young Chef 2018.

In 2019, he joined the HA’ project, a restaurant located in the Hotel Xcaret México, with the signature of chef Carlos Gaytán, who was the first Mexican to win a Michelin star. HA’ offers visitors unique

culinary experiences, authentic flavors, and local ingredients. Valera’s achievements have been recognized with accolades, including AAA 5 Diamonds for three consecutive years, an appearance on the list of “The 250 Best Restaurants in Mexico” for two straight years, a mention in “LA LISTE of the 1000 Best Restaurants of the world” and a nomination in the Gourmet Awards 2020.
